Tituba's Weekend Pancakes

This opera was very special to me. I was literally plucked out of the chorus and asked to audition for the role of Tituba by the late Ed Purington and Placido Domingo. This recipe is so easy. You can also use 2 tablespoons of either sugar. I like it better with the brown sugar. I rarely use butter when I bake. I love using yogurt in place of butter or oil.



INGREDIENTS

1 1/2 Cup All Purpose Flour

1 tablespoon pure cane sugar

1 tablespoon brown sugar

2 teaspoons baking powder

1/2 teaspoon salt

2 tablespoons vanilla yogurt

1 large egg

Any topping you like

  • Step 1 In a small bowl, whisk together flour, sugar, baking powder, and salt; set aside.

  • Step 2 In a medium bowl, whisk together milk, yogurt, and egg. Add dry ingredients to milk mixture; whisk until just moistened.

  • Step 3 Spray skillet with non stick spray. Make sure the skillet is hot before adding mixture.

  • Step 4 I like to poor the mixture into a pyrex measuring cup to make for easy poor onto the skillet.

  • Step 5 Cook until surface of pancakes have some bubbles and a few have burst, 1 to 2 minutes. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more.

  • Step 6 Plate the pancakes and add a topping of your choice.
