Paola Bassanese' White Chocolate Soufflé with Elderflower Inspired by "La Traviata"

The Artistry of Paola Bassanese

Paola Bassanese is renowned for her innovative approach to pastry, combining classic techniques with modern flair. Drawing inspiration from the enchanting narrative of "La Traviata," Paola has crafted a dessert that pays homage to the opulent world of the opera while offering a contemporary twist.


Recipe: White Chocolate Soufflé with Elderflower

Ingredients:

  • 1 tbs. of pink bubbly (any pink sparkling wine)

  • 2 ounces white chocolate

  • 1 tbs. self-rising flour

  • 1 tbs. each of elderflower and nettle cordial

  • 1 pinch of salt

  • 2 tbs. granulated sugar (or more to your personal taste)

  • 1 tbs of vegetable oil

  • 1 egg yolk and 1 egg white

  • 1/3 cup of milk

  • 6 silicone Moulds

MAKES 6

Instructions:

  1. Preheat the oven to 200°C (390°F). Butter the ramekins and coat them with sugar, tapping out any excess.

  2.  combine the eggs with a bit of salt and sugar.

  3. Whisk everything together until it's very fluffy.

  4. Once your eggs are nice and bubbly, add the milk, the elderflower, vegetable oil, and the white chocolate.

  5. When everything is combined add the pink bubbly because in La Traviata there's a scene where there's a toast to life and beauty!

  6. Add the elderflower.

  7. Pour the mixture into the moulds and then bake for 10 to 15 minutes.

  8. Take the soufflés straight out of the oven. They will collapse very soon though.
